Vineyard: These grapes are grown on a clayey soil with a gravelly substrate which is rich in minerals.
Production: The soft pressing of the grapes is followed by the vinification with selected yeasts at a controlled temperature of 16 – 17 ℃. The final step is refermentation in the autoclave with the Charmat method. The sparkling Prosecco DOC Campet string tying is the most traditional and historical form of bottling this wine, as in the past the cork was tied by hand to maintain pressure.
