Production: The grapes are harvested in the second half of August and they undergo non aggressive destemming, 100 hours of cryomaceration, pressing, followed by spontaneous fermentation in small, egg shaped cement vats for 15 days. The wine is then aged on the lees.
Colour: The Brissaia Maremma Toscana Ansonica organic DOC has an intense bright yellow colour with golden shades.
Nose: Scents of mediterranean scrub, plum, thyme and walnuts.
Taste: Mineral taste with yellow apple and candied yellow fruits.
